For years now I’ve been trying to get Conor to eat salmon. I’ve offered it up for dinner many times, yet it always gets turned down. Finally I just went for it (while he was out flying and didn’t have a say in dinner that night), and made this awesome Maple Crusted Salmon recipe. This was my first time cooking fish before, so I was a bit nervous at first, and more than likely over cooked it, but it was still DELICIOUS. Even my salmon-hating Hubby loved this recipe. This will for sure be a go-to from now on!

Maple Crusted Salmon
INGREDIENTS:
- 1 tablespoon chile powder
- 1 tablespoon paprika
- 2 teaspoons raw brown sugar
- ½ teaspoon kosher salt
- 1½ pounds skinless salmon fillets, cut into 3 or 4 portions
- 3 tablespoons pure maple syrup
PREPARATION:
- Preheat your oven to broil. Line a baking sheet with aluminum foil. Spray with cooking spray.
- In a small separate bowl, mix together your dry ingredients (chile powder, paprika, brown sugar, and salt)
- Sprinkle the chili powder mixture evenly over the tops of the salmon fillets. Don’t be worried about adding too much. Generously coat each fillet.
- Place the salmon on the baking sheet and broil for 6-9 minutes, depending on how thick your fillets are. The longer on broil, the crispier the crust!
- Remove the salmon from the oven and brush the maple syrup over the tops, coating the spice crust.
- Return to the oven and broil for an additional 1-2 minutes until the maple syrup is bubbling and a crust is formed.. Serve immediately.

This recipe is a great mix between spicy and sweet. The chile crust gives it a little kick while the crunchy maple syrup crusts evens it out perfectly with just a touch of sweetness. We partnered this salmon with some garlic broccoli and a olive oil garlic couscous (garlic fans in this house)!
