
There are a couple wonderful things about this dish:
-It’s healthy and actually quite nutritious
-It comes together so quickly and easily, perfect for a busy weeknight dinner
-It tastes absolutely delicious, and left overs are even better
But most importantly….
-There’s only ONE dish to clean!!!


If there’s one thing we love in this household, it’s chicken sausage. We eat it quite often, all different flavors, and in many different recipes. So when I found a recipe pairing our beloved favorite with sweet potatoes, thinly sliced apples, and red onion I knew it was worth a shot.
While I was at work the following morning after this delicious dinner, Conor decided to cut all the ingredients up just a little more, then bake it again with two eggs on top for a savory and satisfying breakfast. Per his words, it was the “best breakfast he’s had in a while.” HE is the king of breakfast, so I knew we had a winner.

Chicken Sausage Sweet Potato Bake:
INGREDIENTS:
- 1 pound apple chicken sausage (about 4-5 links)
- 2 medium apples, sliced thin. I used honeycrisp
- 2 medium sweet potatoes, sliced into chunks
- 1 red onion, sliced thin
- 2 tablespoons olive oil
- 2 teaspoons rosemary
- 1 teaspoon sage
- 1/2 teaspoon thyme
- Salt and Pepper to taste
PREPARATION:
- Preheat oven to 350 degrees. Spray a large baking dish with cooking spray.
- Chop sweet potatoes, slice apples, and cut onions. Layer these ingredients in the dish.
- Drizzle 1 1/2 tbs olive oil on top of ingredients. Sprinkle with rosemary, sage, thyme, salt, and pepper. Toss all ingredients in dish to coat evenly.
- Place chicken sausage links on top of the vegetables. Drizzle with remaining olive oil and season with additional salt and pepper if needed.
- Place in the oven for approximately 50-60 minutes (flip the sausage half way through, as well as toss the apples and veggies).
- Cut sausage links into pieces, mix all ingredients together.
- Serve and enjoy!

**Any type of chicken sausage may be used, however we prefer the apple chicken sausage from Al Fresco brand. This pairs really well with the apples in the dish.
