The Best Healthy Turkey Chili

Temperatures are staying UNDER 80 degrees here… which means it’s ALL SOUP ALL THE TIME!! (The Vermonter in me is a bit ashamed, oh well)! And these days there’s rarely a Sunday where you don’t find us sitting on the couch watching our beloved Patriots.

So on this Sunday, I had decided to whip up a yummy turkey chili to enjoy while watching Tom Brady the game. Using ground turkey, fresh vegetables, and low sodium organic broth, this chili really is as healthy as they come!

Served with giant chunks of avocado and yummy blue tortilla chips this soup is great for game day, a week night dinner, and even better as lunch time left overs the following days that upcoming week!

THE BEST HEALTHY TURKEY CHILI

INGREDIENTS:

  1. 2 tsp olive oil
  2. 1 yellow onion, chopped
  3. 3 garlic cloves, minced
  4. 1 medium red bell pepper, chopped
  5. 1 pound lean ground turkey
  6. 4 Tbs chili powder
  7. 2 tsp ground cumin
  8. 1 tsp dried oregano
  9. 1/4 tsp cayenne pepper
  10. 1/2 tsp salt, plus more for taste
  11. 1 (28 ounce) can diced tomatoes
  12. 1 1/4 cup low sodium organic chicken broth
  13. 2 (15 ounce) cans low sodium dark red kidney beans, rinsed and drained
  14. 1 (15 ounce) can corn, rinsed and drained
  15. For Topping: avocado, tortilla chips, any other toppings of your liking

PREPARATION:

  1. Place oil in large pot and place over medium-high heat.
  2. Add onion, garlic, and red pepper. Saute for 5-7 minutes, stirring frequently.
  3. Next, add in ground turkey and break up the meat, cook until no longer pink
  4. Add chili powder, cumin, oregano, cayenne pepper, and salt; stir
  5. Add tomatoes, chicken broth, kidney beans, and corn.
  6. Bring to a boil, then reduce heat and simmer for about 30-45 minutes, or until chili thickens
  7. Taste and adjust seasonings as needed
  8. Garnish with whatever you please! We chose chunks of avocado and tortilla chips.
