Sweet & Spicy Shrimp Pasta

Okay guys, now I’m going to be honest. I really didn’t love this recipe. I had hoped it was going to be much better than it was, however it really didn’t taste great. Now, as part of my challenge for myself during this year, I was going to try to improve my cooking skills by making a new recipe each week- with that, there’s no promise that they’ll all be good! Especially if you knew my cooking skills before this challenge started!

I’m posting this recipe on here just to stick to my word and my challenge this year! And also in hopes that maybe I can get some suggestions of some ingredient swaps to make this recipe better!

Now here’s where I think the recipe went wrong. The sauce and shrimp went together incredibly well… however it’s not something that goes on pasta. The sauce contained mayonnaise, which when added with whole wheat pasta, just really didn’t taste great.

So, any suggestions are totally welcome- I’d love to perfect this recipe to make it a staple in our home!

SWEET & SPICY SHRIMP PASTA

INGREDIENTS:

For the Pasta:

  1. 1lb spaghetti or your favorite pasta of choice (we used whole wheat spaghetti)
  2. 1.5lb medium shrimp, peeled and deveined
  3. 1/2 tbs olive oil
  4. 3 cloves garlic, minced
  5. 1 tbs fresh parsley
  6. 3 tsp paprika
  7. Black pepper to taste

For the Sauce:

  1. 1/2 cup mayonnaise (we used light)
  2. 1/2 cup Thai Sweet Chili sauce
  3. 2 gloves garlic, minced
  4. 1/4 tsp crushed red pepper flakes
  5. 1/2 tbs onion powder

PREPARATION:

  1. In a large bowl, combine all “Sauce” ingredients, then set aside
  2. Cook pasta according to box directions, drain
  3. Place uncooked shrimp in a bowl, add paprika, 3 cloves of garlic, and black pepper to taste
  4. In a large skillet, on medium-high heat, add “dressed” uncooked shrimp
  5. Stir constantly while cooking until no longer pink
  6. Remove from heat and set aside
  7. In a large bowl combine pasta, shrimp, and sauce. Combine well.

Again, let me know if you have any ideas on changes to this dish! Conor actually loved it (though I think he loves everything… there’s not much that guy won’t eat). But it really just didn’t do it for me. So, help a girl out!!
