I made these Blueberry Peach Cobbler Bars for our Easter celebration. I was a little nervous making these for the very first time, without any practice, knowing that I’d be bringing them to a large gathering, however… life happens, and I just didn’t have the time to make a batch beforehand. But, all was okay, because these dessert bars turned out INCREDIBLE and were so delicious! Just the right amount of sweet, without being too sugary.

These bars were a hit at our Easter celebration. The entire batch made about 24 (I cut them into tiny bite size squares), and I think I only took about 4 or 5 home? In my book, that’s a win!
Surprisingly these bars were very easy to make, the prep time took absolutely no time at all, and all it required was about 40 minutes in the oven. If you’re a dessert for breakfast kind of person then you’re going to LOVE these bars- they go great with a hot cup of coffee early in the morning.

The original recipe came from a cookbook I received in the mail a few weeks ago, and have been so excited about. The Pretty Dish is written by Jessica Merchant. She is the creator of How Sweet Eats, an awesome food blog/website where she shares all her best secrets to wonderful family meals and memories all started in the kitchen.

The cookbook includes everything from pantry staples, breakfast, snacks and apps, entrees, dessert, cocktails, party menus, and even music playlists.
However, my favorite part of The Pretty Dish, might just be the last section, where she’s created an entire “menu” of “food for your face”! Jessica creates all her own body scrubs, masks, sprays, and balms all from staples from her kitchen. The clean beauty freak in me absolutely loves this!

Back to the bars…..
Like I said, these guys were a hit! Such an easy grab and go dessert, they will definitely be making an appearance again.
These dessert bars would be perfect for the summer where peaches and blueberries are ripe as can be, juicy, and delicious! I see them at a delicious summer BBQ after a night of grilled deliciousness, pasta salads, fresh fruit salad, and an ice cold lemonade (or cocktail, whatever floats your boat).

BLUEBERRY PEACH COBBLER BARS
INGREDIENTS:
CRUST & TOPPING:
- 3 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted
FILLING:
- 3 large eggs
- 1/2 cup half-and-half
- 1 cup firmly packed brown sugar
- 1 Tbs cornstarch
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 2 cup fresh blueberries
- 1 cup chopped fresh peaches
- pinch of salt
PREPARATION:
- Preheat oven to 350 degrees. Spray a 13×9″ baking dish with cooking spray
TO MAKE CRUST & TOPPING:
- In a large bowl, str together the flour, granulated sugar, and salt.
- Add butter and stir until your mixture becomes almost a shortbread-like dough.
- Press half of the dough into the bottom of the baking dish, about 1/4″ thick.
TO MAKE FILLING:
- In another bowl, whisk together the eggs, half-and-half, brown sugar, cornstarch, vanilla, cinnamon, and salt.
- Gently fold in blueberries and peaches
- Pour mixture over crust and spread evenly
- Crumble the remaining dough over the blueberry/peach mixture
- Bake for 40-45minutes
- Let bars cool completely before slicing into squares

Hello. Thank you for sharing your recipe and this would be a great break fast bar. I have been looking for more breakfast ideas, and I think 1 serving would be great for diet savy people too. Look forward to reading more of your posts.
