
Ummm….. YUM
This Rosemary Citrus Salmon was simply to die for, and the fact that I could cook it alongside the asparagus all in one pan made it even better! Though hubs doesn’t totally love salmon unless it’s coated in maple syrup and brown sugar (though let’s be real… who wouldn’t love that more), he still enjoyed this meal!
Funny enough this meal came to me while I was using one of my absolute favorite Beautycounter products! I had opened up my Body Oil in Rosemary Citrus and all of a sudden it reminded me of a recipe I had come across a few weeks ago over on Cotter Crunch

This recipe was super quick and easy; it required no sort of marinating at all, just the addition of some yummy fresh citrus and herbs and we were good to go! We baked it on top of a fresh bunch of asparagus, but you could easily substitute any sort of vegetable you’d like.
We then also served it on top of some yummy Harvest Grains Blend from Trader Joes. Unfortunately we don’t have a Trader Joes near us, which I totally miss! But when my parents visited this past summer my mom brought me this mix from the store. It’s been in our pantry since then, but I figured this was a good meal to whip it out!

All in all, this recipe was a win in my book! I absolutely love salmon, but unfortunately I don’t get the opportunity to cook it all that often (Conor doesn’t love it). So with a deployment on the horizon, I sense a lot more salmon recipes in my future!

ROSEMARY CITRUS SALMON WITH ASPARAGUS
INGREDIENTS:
- 1/3 cup olive oil
- pinch ground pepper
- 2 Tbs fresh orange juice
- 2 Tbs fresh rosemary, plus 1 or 2 extra sprigs to garnish
- 1 Tbs lemon juice
- 1/2 tsp garlic, minced
- 1/4 tsp grated orange peel, dried
- Sea salt to taste
- 1 bunch thin asparagus, trimmed (or your vegetable of choice)
- Olive oil to drizzle
- 10-12 oz. salmon (3 fillets)
- Thinly sliced orange (about 5-6)
PREPARATION:
- Preheat oven to 400 degrees
- Whisk together orange juice, lemon, 2 tbs rosemary, 1/3 cup olive oil, pinch of salt, pepper, orange peel, and garlic, set aside.
- Layer your dish by adding asparagus first. Drizzle with olive oil
- Place your salmon in your dish between asparagus spears
- Drizzle the orange rosemary marinade on top of salmon
- Add thin orange slices on top of salmon and asparagus
- Place fresh sprigs of rosemary on fish and around the dish
- Feel free to sprinkle extra orange peel, salt, and pepper before baking
- Bake for about 15 minutes until salmon is fully cooked.
