Pineapple “Nicecream”

Now that I had given up dairy for a little while, I was determined to find a substitute for my beloved ice-cream addiction (seriously missing Ben & Jerrys Cherry Garcia right now). This recipe for Pineapple “Nicecream” fulfills my ice cream craving all while keeping sugar content low, ingredients at a minimum and NO DAIRY!

I’ve tried dairy free ice creams before- they actually have quite a few brands in the grocery store. But from what I’ve found, what they lack in dairy they then often make up for in their sugar content. It’s hard to feel like you’re making a healthier and smarter decision when you grab a spoonful of one of those ice creams.

So, “Nicecream” it is!

I LOOOOVE all tropical flavors- pineapple, coconut, mango, banana, the list goes on! So this nicecream is right up my ally! And with only limited ingredients- all of which are fruits and vegetable (is avocado a fruit or vegetable???), it made it easy to choose this dairy free option over the other store bought sugar packed ones!

This recipe is as easy as they come and will leave you with a tasty frozen dessert to enjoy for a few days! I even had it for breakfast one morning 🙂 Enjoy!!

 

PINEAPPLE “NICECREAM”

 

INGREDIENTS:

  1. 2 large frozen bananas (the more ripe, the better)
  2. chunks of one pineapple, frozen (or 2 cups of the pre-frozen pineapple chunks)
  3. 1/2 avocado
  4. 1/4 cup shredded coconut

 

PREPARATION:

  1. Put all ingredients into your blender.
  2. Blend until creamy and nice.
  3. Top with a little extra shredded coconut if desired
  4. Serve and eat right away!

Easy as that!
