
This Avocado Pesto recipe was simply delicious! I’m really actually not a huge fan of pesto; I’m unsure if maybe when I was younger I overdid it on pesto so now I don’t enjoy it, or what! BUT, regardless… this was delicious, as I really can’t say NO to anything with avocado involved.

Made with fresh, yummy, summer ingredients this pesto was great on whole wheat pasta, but would also be great on a chicken sandwich (cold or grilled), avocado toast with an egg in the morning, the possibilities are endless with this yummy spread!

It takes all but 5 minutes once your ingredients are in the food processor. And with that, you have a quick and easy sauce or spread you can put on anything! Check out the recipe below:
AVOCADO PESTO
INGREDIENTS:
- 2 Hass Avocados
- Juice of 1/2 lemon
- 1/2 cup Walnuts or Pine nuts
- 4 Garlic Cloves
- 1/2 cup Olive Oil
- 2 cups Fresh Basil
- 1/3 cup Finely Grated Parmesan Cheese
- Salt and Pepper to taste
PREPARATION:
- Slice avocados in half. Remove pit from middle and scoop the flesh of the avocados into a food processor. Add lemon juice, walnuts, garlic, olive oil, and salt and pepper.
- Blend until walnuts are crushed and no longer lumpy. Add basil, parmesan cheese, and additional salt and pepper to taste and blend until pesto is thick, smooth, and creamy.
