Healthy Lemon Blueberry Pancakes

Pancakes? Healthy?? YUP! And the best part of it is, the main batter for these healthy pancakes is just 3 simple ingredients. That’s it! Banana, Eggs, and Rolled Oats!

I’ve never really been a pancake for breakfast kind of person. My go-to was always eggs, bacon, and toast- simply because I’m not a heavy sweets kind of gal! If I’m going to have dessert or something sweet it’s either :

1. ice cream, or

2. fruit based.

These pancakes are incredibly light and fruit filled, and anything filled with lemon has my attention immediately.

While these pancakes have a consistency a bit different than your normal giant fluffy pancake, the taste is still there, and they’re filled with healthy and nutritious ingredients, all under 300 calories! I would make these any day over regular pancakes!

Now, while I prefer my pancakes fruit filled, hubby is a chocolate lover. The best part about this recipe is that while you keep your main batter ingredients the same, you can change up whatever fillings or toppings you prefer! I love lemon and blueberry, drizzled with some honey. Conor loves chocolate chip, slathered in pure Vermont maple syrup (his pancakes are a bit more than 300 calories…). The options are endless!! Blueberry, banana, peanut butter, almond butter, whatever you prefer- the choice is yours!

HEALTHY LEMON BLUEBERRY PANCAKES

**Makes ONE serving size (2 large pancakes)

INGREDIENTS:

  1. 1 Ripe Banana
  2. 2 Large Eggs
  3. 1/4 cup Rolled Oats
  4.  Zest of 1 lemon
  5. Blueberries to taste

PREPARATION:

  1. In a blender add banana, eggs, and rolled oats. Blend together until mixed thoroughly
  2. Zest your lemon and add to mixture, whisk together.
  3. Add your pancakes to the frying pan or griddle, proceed to cook the same way you would with regular pancakes. Add Blueberries, when you notice pancakes start to bubble, flip over!
  4. I topped my pancakes with some more blueberries, a dash of cinnamon, and a drizzle of honey when finished
  5. Pour yourself a nice hot cup of coffee, and ENJOY!!
