Chipotle Shrimp Tacos

 We had lots of left over ingredients from our Buffalo Chicken Quinoa Salad the other night, so I put together these awesome Chipotle Shrimp Tacos.  Shrimp Tacos have always been a favorite of mine. Growing up, my Dad’s Shrimp Tacos were one of my favorite  and still are to this day. For anyone who likes a hint of chipotle pepper on their food, this recipe is great, as these shrimp have the perfect blend of spice and smoke. Then, you really can’t go wrong when anything’s topped with fresh avocado, and the crunch of red cabbage and carrots. To balance out the heat, these tacos are topped with a fresh creamy cilantro-lime sauce.

This recipe is easy enough to quickly whip up on a weeknight when you’re in a rush. Or,  if you’re looking for a good summer weekend recipe, mix up a couple of margaritas to enjoy on the side!

 

CHIPOTLE SHRIMP TACOS with CILANTRO-LIME SAUCE

INGREDIENTS:

Cilantro-Lime Sauce:

  1. 1/2 cup sour cream
  2. 1 tbs fresh lime juice
  3. 3 tbs finely chopped cilantro
  4. 1 clove minced garlic
  5. Salt & Pepper to taste

Chipotle Shrimp Tacos:

  1. 1 lb medium shrimp, peeled, deveined, and tails removed
  2. 3/4 tsp chipotle chili powder
  3. 1/2 tsp chili powder
  4. 1/2 tsp ground cumin
  5. 1/4 tsp ground paprika
  6. Salt and pepper to taste
  7. 1 tbs olive oil

For Serving:

  1. 1 diced avocado
  2. 2 cups shredded red cabbage
  3. 1.5 cup shredded carrots
  4. 1 lime wedged
  5. 6 inch tortillas (flour or corn)

PREPARATION:

Cilantro-Lime Sauce:

  1. In a bowl, whisk together all ingredients while seasoning with salt and pepper to taste.
  2. Cover and chill until ready to use

Shrimp: 

  1. In a medium sized bowl, whisk together chipotle chili powder, chili powder, cumin, paprika, salt, and pepper. Add shrimp and toss until evenly coated
  2. Heat olive oil in a non-stick skillet over medium-high heat. Add shrimp and cook, tossing half way through, about 3-4 minutes.

To Assemble Tacos:

  1. Warm tortillas on stove top or in oven until golden brown.
  2. Layer cabbage, carrots, shrimp, and avocado. Drizzle with Cilantro-Lime sauce. Top with fresh lime juice to taste.
  3. Enjoy!!

My professional taste tester really enjoyed this one! The shrimp give an awesome balance of smokey and spicy, and the cilantro-lime sauce balances it all out. This will definitely be a go to from now on.
